Make sure Flight Simulator is NOT running and then open the TCE editor via the Windows Start button, All programs, Just flight, 727 Professional, Texture and config editor route.

Click on the Config Tab. You will see in the top middle area "Select flight deck". You have two selections for each type of variant.

You can choose:

1. The 2D cockpit and views with the First Officer, Co-Pilot (F/O) that has 11 2D panels but NO Virtual cockpit

or

2. The 2D panel with Virtual Cockpit (VC) and Virtual Cockpit side views without the F/O which is the Virtual Cockpit and 6 2D panels. 

Make your selection and press SAVE. Next time you start the appropriate 727 in FS you will see your selection.
